Funkin Puree

Yesterday's NY Times Food and Wine section reported on the Funkin line of ready-made purees.

"Ah, Summer: For a Bellini, The Easy Way To Peach Purée
A classic Bellini — prosecco and white peach purée — is as lush a token of summer as a ripe tomato. The challenge is the purée. If you can find perfect white peaches, you might be best advised to bite into them and let the juice drip down your chin, instead of peeling and pitting them to flavor your Bellinis, because there are alternatives to starting with fresh fruit.
Funkin, an English company that makes fruit purées in bulk for restaurants and bars, has introduced an 8.4-ounce package of French white peach purée. Just chill the shelf-stable foil pouch, pop the top, squeeze the purée into a flute and add the bubbly. Each package can make six to eight drinks. The purée can also be used as a sauce or in smoothies. It is sold for $8.99 a package at Agata & Valentina, and for $9.99 a package at Bowery Kitchen in the Chelsea Market, and at Garden of Eden on East 14th Street. "

According to the Funkin Puree folks the product is 90% whole fruit, will last for a full year unopened, and is available in Pear, Mango, Banana, Kiwi, Raspberry, Passion Fruit, Blackcurrant, Strawberry, Whitepeach, Lemon, Morello Cherry, Green Apple, Lychee, and Apricot. In addition to the Bellini idea, which sounds delicious, there are loads of other cocktail recipes available on the Funkin Puree website.
